LOVELY, LOVELY BIRTHDAY CUPCAKES…

How  good  is  to  make  a birthday in the home  garden with a beautiful day of summer. This gorgeous birthday ,was a 6 year old girl. This  birthday was very beautiful, colorful and sweet. I loved the decoration (Cristiana baloes) of the cupcakes in balloons.  All around brings us back to childhood. The tables were decorated with lots of imagination, lots of variety of sweets and cupcakes. I loved everything!!!  Constance Zahn.

” FLAGRANTE DELICIA….”

Today I will share another recipe with chocolate. This mousse is chocolate heaven! I do a lot for events ,weddings, dinners.

DARK  CHOCOLATE  MOUSSES AND  CARAMEL

INGREDIENTS :

180 g  sugar

600 ml  cold double cream

60 g butter

170 g  good quality dark chocolate (70% cocoa solids) chopped into small pieces.

3 tablespoons good quality  cocoa powder ,plus  extra  for dusting .

 

METHOD:

In a large bowl ,whisk the double cream until it becomes soft and very firm. Transfer to the fridge to chill.   Caramelize the sugar(180g)   dry without water!! In saucepan on medium heat. Only the sugar!! Stir with a spoon until resulting caramel attains medium to dark tan color, without burning!  Add  immediately, the butter and 4 tablespoons of  chilled double cream  and mix well. Pour the caramel to slightly over chocolate, stirring gently until all the chocolate has melted. Let the cream cool down 45°C.  room temperature. Will be mixing the rest of the double cream slowly, so hat the cream does not lose volume!   pour the mixture into a serving individual  bowl cover with cling film and transfer to the  fridge for an hour or two until set. Just before you’re ready to serve, give the mousse a lovely dusting of cocoa.  This mousse is delicious! Chocolate with caramel make a beautiful wedding!

GO TO SALZBURG …

I love the photograph of  EVERTON ROSA !  SALZBURG  is in Austria! It is very cold hahaha, but the mountains, nature so green outweigh the rain!  Yara and Petter made a traditional dinner for “Bachelorette”,  party with family. I liked the clothes that all guests had to wear!

CHOCOLATE CAKE WITH BISCUITS ,CRANBERRIES AND HAZELNUTS…

I learned to make this cake with Leonor de Sousa Bastos (Flagrante delicia) . Today is one of the favorite cakes of events.  This cake is very good, believe me !

INGREDIENTS

125g melted butter

70g honey

100g of dark chocolate 70% cocoa

100g of milk chocolate

1 egg ,beaten

70g digestive biscuits

50g whole hazelnuts ,toasted

50g  dry cranberries

DIRECTIONS

Grease and line with parchment paper a form of 20 x 8 cm .

Melt the chocolate in a double boiler. Add the butter. After the chocolate is well melted draws the fire.  Add the honey and mix well. Add the egg mixture to the hot ,whipping away. Mix hazelnuts, cranberries and digestive biscuits broken into large pieces. Pour the mixture into the shape and refrigerate at least 4 hours or until firm.

Unmold and serve very cold.

WEDDING IN ISRAEL

This marriage in Israel is interesting! I really like the pictures  of photographer” Everton Rosa”. I follow his work!  Jewish marriage is the full meaning and traditions! These newlyweds decided to do two parties in different  countries!  One of them was in Israel,was a small party!

I LOVE THIS CAKE…

The cake is all white ,the child can become a genuine picasso!! I think the kids will find it super fun! They can draw and paint the own cake and of course their friends can help. We also can have this cake on our birthday and we can turn some lovely artists in front of our friends and guests! I love people who have new ideas ! SNOW WHITE…

Birthday of a little  girl who did one year!One decoration full of  charm with the theme  of Snow White.The story of Snow White was recreated at a table with apples ,animals,sweets of the seven dwarfs  and beautiful flowers!!  I enjoyed the cake! Very beautiful and well decorated with all the details. Gorgeous birthday,constance zahn.

SWEET TO THE SOUL

This recipe is one that leaves a pleasant smell to the kitchen and at hour of testing I can close my eyes to savor each ingredient. This buns are stuffed  with guava jam but I also use other types of jams  and  dulce de leche. I make my homemade jams, but you can use the ones you like most. For those who live in a country that has ease of having guavas, I can give a guava jam recipe. Here in London I have a supplier who brings me fresh guavas. For parties of kids I cut the dough with shapes with flowers, cars, etc…

BUNS  STUFFED WITH  GUAVA  JAMS.

Serves: 40 buns

INGREDIENTS

1 kg  all purpose  flour

1 pkg active dry yeast

1oo g sugar

4 eggs

550 ml  milk

250 g   unsalted  butter

20 g salt

DIRECTIONS:

In  a large mixing  bowl combine the flour and the dry yeast. Also add the eggs,salt and sugar.Stir the ingredients well, I like to mix with hands. Gradually add milk stirring  constantly. When the dough is smooth  and homogeneous, incorporating  butter. Turn out on a floured surface. Stir until the dough  stand smooth and elastic. Let the dough rest 1 hour. After the dough has rested ,divide the dough into small balls. Let rest until doubled in volume for 10 minutes. Finally, open a little balls and put a tablespoon of your favorite jam. Brush the buns with beaten egg. Bake the buns in preheated  220C , until golden.

LUNCH TIME…

Was the birthday of a girl who turned  60 . Lunch only for “girls”  and  family. With flowers in decoration to remember the spring. Fruity cake and sweet brigadeiros were beautiful  in decoration mediterranean Constance zahn.

CAKE OPERA CO.

Alexandria  Pellegrino     and  pastry  chef  Jessica Smith ,they are signing  these artistic cakes,true works of art that overflows with imagination.  Alexandria Pellegrino  founded Cake Opera Co. in 2007  and since then has received “international praise  as one of the industry’s  leading  cake designers.She is the recipient of several awards including two gold medals on Food Network  Challenge”. I find incredible  and their work and would like to try the cakes. Is amazing  to see their work.

SWEET AND SALTY

001Here’s  one of my recipes that is present  in most  of the  marriages parties and other events.  Today I share with you.                                                                                    APRICOT  WITH GOAT CHEESE AND PISTACHIOS

prep time : 15 mins

200 g  dried apricot

100 g chopped pistachios

120 g goat cheese

Directions:

Make a small cut in dried apricots.Make the cut without separating the dried  apricot  into two parts. Put the goat cheese in a bowl  and gently mash the cheese. Fill the dried apricots with cheese. Finally, pass the apricots by the chopped pistachios.

Now, enjoy!

MAGGIE AUSTIN CAKE

Maggie Austin  was a ballerina of classic  ballet, today it is one cake designer  ,one of the most sophisticated. She decorates her cakes in a perfection on movement and lightness. As if she is mixed  their cakes to dance ,art and all beautiful things to be enjoyed. Her work is a true joy to my eyes.

TEMARI CAKE

Temari cake is a real sweet art!! In Japan temari balls are made by the mothers and grandmothers ,for the children play,were made with leftovers from old kimonos. Over the years their embroideries were considered a kind of art. Today who receives a temari ball as a gift,means luck and a long happy life. The artist  Maki Searle  ( MAKI’S  CAKE) , was inspired by the temari balls ,turning them into beautiful mini cakes .Can be used in wedding parties ,as gifts for the guests to take home.I really like the flavor of each mini cakes ,they are  wonderful!  The atelier of Maki’s  cake is in  SURREY .As you can see by the photos I was presented with several to taste!!!!!

WONDERFUL CHOCCYWOCCYDOODAH

These cakes are fantastic ,I felt like I was in  an exhibition of art. The store has the smell of chocolate in the air ,all cakes are made with chocolate. I love the decor of the shop! the cakes are not only beautiful on the outside ,inside are HUMMMM  delicious.  A slice of cake on the plate for testing ,is  lemon cake with white and dark  chocolate sauce with dripping red berries sauce, UNREAL!!!  I recommend that anyone living in London or around ,should go to this paradise of chocolate  is  in the heart  of   SOHO.
